Starchy potatoes, like Russets, are typically better for achieving a crispy finish compared to waxy varieties, such as red or yellow potatoes. When preparing the potatoes, cutting them into uniform sizes ensures even cooking. Soaking the cut potatoes in cold water for about 30 minutes before cooking can also help to remove excess starch, which contributes to a crispier texture. After soaking, be sure to dry them thoroughly before tossing them in a light coating of oil and seasoning. With these tips in mind, you can elevate your air-fried potato snacks from soggy to sensationally crispy.
