7 Mistakes That Made My Khichdi Mushy and How I Fixed Them

Khichdi, a beloved dish in many Indian households, is often seen as a comfort food that combines rice and lentils in a simple, wholesome preparation. However, achieving the perfect consistency can be challenging, and I found myself making several mistakes that resulted in my khichdi often turning out too mushy. Over time, I learned to identify these mistakes and took steps to correct them, transforming my khichdi into a delightful, well-balanced dish.

One of the primary mistakes I made was using an excessive amount of water. Khichdi should ideally have a creamy texture, but adding too much water can lead to a soupy consistency. I learned to measure the water carefully, keeping in mind the type of rice and lentils used. Generally, a 1:2 ratio of rice and lentils to water works best, but adjusting this ratio based on personal preference and the specific ingredients can make a significant difference in the final texture.

Another issue was cooking time. I often found myself overcooking the khichdi, which contributed to its mushiness. Learning to monitor the cooking time more closely helped immensely. I discovered that cooking the khichdi just until the rice and lentils were tender, but not falling apart, allowed for a much more enjoyable texture.
